It's really hard to recommend a Phish "song", because TBH they couldn't really write a song if their life depended on it. This is really strange coming from me, who values songwriting as a quality more than anything from bands such as the Hip. But that's really not the point, since Phish are one of the greatest live bands (and by far my favourite live band) on the planet. The way they construct a concert is a work of art I've never seen another band come close to replicating. Their sets are always unique and usually meticulously crafted to ensure perfect flow and energy build from song to song.
I've attended too many concerts by other bands that have energy, then lose it instantly in a dud song, or they wait too long between songs. Phish don't have any gaps between songs in their second sets and it's an fantastic experience to ensure energy carries through and builds from song to song. Their exploratory nature is really what gets me though, the fact that they will venture into unknown territory each time they play a song to explore new themes. So even a song I don't necessarily care for could become an unexpected monster at any given show. Obviously, this is not necessarily everyone's style, so I'm not surprised they don't have mass appeal or that only a handful of my friends "get" Phish.
To answer your original question, I guess if I had to recommend a single scripted song, I would highly recommend "Harry Hood" from "A Live One". As for one of their ventures into the unknown, I really love this jam that goes places so beautiful in the last 6 minutes you can scarcely believe it was improvised:

There are thousands of examples of equally interesting improvisational suites. Honestly, I think the best way to appreciate Phish is to just go to a concert. You don't need to know any of the songs. I didn't know them at all when I went to my first show in 2003, and I've been hooked ever since.

I'll track down Big Boat soon, but for now Set II of 2016-09-04 will do quite nicely. It's my favourite set of the year so far.

After some time to digest the album, I think it's fantastic. I have even gained an appreciation for the quickly shunned 'Friends' .
My favourites appear to be the Mike Gordon tunes as of now (Home, Waking Up Dead).
More is also a favourite.
Don't get me started on Petrichor.... what a masterpiece!
Can't wait to get this on wax.
(I splurged yesterday and spent way too much money on a Picture of Nectar vinyl.)

There were! I posted about the Baker's Dozen run being incredible. My favourite run of 3.0. For the Maple Donut theme last night, they opened with O Canada ala Jimi Hendrix's Star Spangled Banner at Woodstock. Pretty great. 9 shows in of 13 straight at Madison Square Garden as of last night. No song repeats so far. Catch 'em!
