Wav to MP3 = iTunes
And MP3 to wav; why would you want to do that? If it is to burn to disc in audio format, don't bother converting as most burning software, including iTunes, will do it on the fly for you.

MP3 to WAV = Winamp.
But yeah, there's really no reason why you'd want to do that.
