Just started using Guitar Tracks 3 from CakeWalk. Its a bit much for what I can do right now, but it'll be fun learning.

I think of it as the training wheels to spectacular recording. It's fairly easy to use, and figure out things (if they're not self-evident), and it's geared towards final-mastering, so things generally come out sounding pretty damn good.
It's missing some of the neater bells and whistles, but if recording really is your thing, it'll get you on the right path.
Personally for recording, here's the order I like:
1) Program midi drums
2) Rhythm Guitar
3) Bass
4) Vocal Cue Track for the drummer (lets him know when the changes are coming)
5) Replace midi with live drums
6) Replace Vocal Cue Track with Vocals
7) back-up Vocals
8) Lead Guitar
9) Auxillary instruments (bells, triangle, synth, harmonica, etc etc etc)
