Soundgarden is a great example. I credit their drummer Matt Cameron for a lot of that stuff. As most people know, Cameron has been a full-time member of Pearl Jam for the past few years (pretty much since Soundgarden broke up), and if you listen to PJ's last couple of albums, it's obvious he's been a pretty big influence on their songwriting.
Speaking of f**ked up time signatures, check out the Rheostatics. Those guys have truly mastered the art of experimental song structures.
