Yay, this is a fun thread! I play lots of hip songs, mostly acoustically. I like playing experimenting and playing harder songs acoustically, as well as stuff like "Scared" and "Wheat Kings".
I play NOIS acoustically, and yeah, I play the chords, then the plinky lead guitar riff between verses. Not for the song's sake, but just because it's impressive as hell.
One of the weirder things i've come up with is an acoustic version of The Wherewithal. It's just fingerpicked through the intro, which by the way Chris, goes like this:
fingerpicked verse, chorus, and a weird kind of lullaby strummed bridge. Very cool.
Craziest part about playing Hip songs in America is i'll play them for my friends and they think I wrote them. Then you just use it as a stepping stone to convert them.
