Some of these aren't exactly favs

A song that always surprises you when you hear because you've forgotten how good it is.
The band you are still dying to see live.

I'll go first..
Concert surprise- The Blind Boys of Alabama. They took the headliner slot after Sinead O'Connor stepped out. They had the entire crowd on their feet before they were even all on stage. Absolutely wonderful show.
Album Production- MJ's Off The Wall by Quincy Jones
Vocalist- Sinead on her 2nd album or Ryan Adams on Gold or Bono during Zootv tour :package
Cover- Cohen's Hallelujah by kd Lang
Lyric - Martyrs don't do much for me etc.
Song that surprises- Thugs
Band I want to see -Underworld

Concert that took you by surprise/didn't expect to enjoy: Blind Boys of Alabama was also one that surprised me when I saw them open for Tom Petty years ago. Preservation Hall Jazz Band was another show that I was pleasantly surprised by.
Favourite album based on production: Day for Night. Maybe it was Daniel Lanois' studio, maybe it is a credit to the sound that Mark Vreeken and Mark Howard were able to capture, and maybe it was some of the French Quarter atmosphere seeping in, but whatever it was, it resulted in one of the best sounding albums of all-time. Yawning or Snarling, for me, epitomizes the great production and sound on that record.
Favourite vocal performer/best vocalist: Daniel Greaves from the Watchmen. Danny used to do a cappella covers during Watchmen sets in the mid 90's and he would bring the house down. My memory is too hazy to remember what those songs were, but I definitely remember the crowd reaction.
Favourite cover song: Two for this: Nirvana covering Bowie's "The Man Who Sold the World" and Hendrix's cover of Dylan's "All Along the Watchtower".
Favourite lyric:"And you run and you run to catch up with the sun but it's sinking, Racing around to come up behind you again" from Pink Floyd's "Time". A great lament on getting older.
A song that always surprises you when you hear because you've forgotten how good it is: "Ain't talkin' 'bout love" from Van Halen. One of my favourite guitar riffs of all-time.
The band you are still dying to see live: I've put a line through almost everything on my wish-list. I've seen them in concert before, but I'd go way out of my way to see REM again if they ever re-formed.

Concert surprise- Grace Potter & The Nocturnals - They had the slot before Bloc Party at the 2008(?) Harvest Jazz and Blues Festival. Walked into the Bloc Party show as Grace took the stage. Little did I know I was about to be converted into a lifelong Grace Potter fan
Album Production Steely Dan - Aja - I discovered Aja only about three years ago, yet it sounds so fresh. Could have been released last year IMO. This album sounds particularly amazing on headphones. (Honorable mention to Steve Winwood's Arc of a Diver)
Vocalist Paolo Nutini - If you're a fan, you know what I mean.

Rheostatics in 1996 opening for the Hip. I wasn't a big fan at the time and I just couldn't get into them. For whatever reason their music just rubbed me the wrong way. But something clicked when I saw them on the Henhouse tour and they completely won me over. Went and bought most of their catalogue after that show and became a huge fan from that point forward. I finally got it.

Favourite album based on production.
The Hip- Road Apples. I'm a big fan of stripped-down live off the floor style production where the instruments and vocals have room to breathe. This is probably as close to the Hip's live sound as you could possibly get in a studio. There's a real warmth and immediacy to it. When you listen to it with a good set of headphones, it sounds like they're right in the room with you.

Favourite vocal performer/best vocalist.
I have to agree with Potsie here and say Danny Greaves from the Watchmen. During their heydey, there honestly wasn't a better singer in rock. I probably saw them live around 15 times and I don't think I ever heard the guy hit a bum note. And those acappella numbers he would do during the encores...just incredible. Favourite cover song.
Johnny Cash- Hurt. A perfect example of an artist taking a cover song and truly making it their own.

Favourite lyric.
"9th and Hennepin" by Tom Waits. The guy always paints such a vivid picture with his lyrics, and this one gets me every time. To me he's arguably the greatest living songwriter in America.

"1000 Miles Away " by the Hoodoo Gurus. Came across the video on Youtube a couple days ago, and it reminded me of how much I adore that band. I'm now on a big Gurus kick and I'm rediscovering their entire catalogue (I love when that happens). Their last album came out in 2010, so I'm not sure if they're still around. There's some really cool stuff here I'll have to check out!! That's kinda the reason I started this thread. Great way to get recommendations for new music.

Now I need to change my fav cover to Cash's Hurt. Totally forgot about that one.
